Welcome to the Meat Quality and Safety Home Page, sponsored by the Purdue University Animal Sciences Department. This site is designed to be a resource for consumers, producers, food service professionals, educators, and 4H and FFA participants. In these pages you will find basic information on meat quality and safely and links to other sources with additional information.


How This Site Is Organized

The Consumers section contains information concerning how to buy, store, and cook meat properly.

The Producers section contains information concerning problems and common conditions with meat.

The Extension Educators section contains information on the science of meat as well as common meat problems.

The 4H/FFA Participants section contains information relevant to meat judging. You will find a coach's guide as well as score sheets for each species.
